The Down Low on Pho

Let me paint a picture for you. The high today in Denver is 18°. I have been traveling, and my frig is as barren as the Mojave desert.  I am cold and hungry. To walk the ten blocks to the grocery store seems as equally unappealing as removing the snow from my car. This is a photo of what lies just around the corner from my apartment. Literally, a meer 45 second walk. Warm, fresh, nutritious, and warm. Thai basil, cilantro, bok choy, sprouts, jalapeños, onions, lime, rice noodles, lightly fried tofu, and delicious broth. A beautiful bowl of Pho. 

I have to admit, before I moved to the city, Pho was not something that I had experienced personally. I had seen Anthony Bourdain enjoying the dish on his visit to Vietnam, and heard others raving about the array of Pho variations. For you other newbies, it is a Vietnamese dish, pronounced 'fuh', usually consisting of broth, rice noodles, herbs, and meat. But now that I have tasted this sweet nectar of the Gods, it is certain that I will be a Pho fan forever.
